Pumpkin Madeleines

I first fell in love with French Madeleines during my study abroad in college. And while I have to admit, I’m more likely to order a ham and cheese croissant or an apple turnover, I do love these light and fluffy bites, especially with my coffee in the morning.

For this recipe, I found that the Pumpkin Madeleines from Mildly Meandering offered the perfect touch of pumpkin and fall spices.

If you’ve never made Madeleines but want to try, I highly encourage you to do so! They’re much easier to pull off than you may think and are always sure to impress. Pumpkin Madeleines from Mildly Meandering

Recipe yields about 20 large Madeleines

Ingredients

  • 2 large eggs

  • 1/2 c. granulated sugar

  • 1 c. all-purpose flour

  • 1/4 c. pumpkin puree

  • 1 tsp. pumpkin pie spice

  • 1/2 tsp. baking powder

  • 1/2 c. butter (melted and cooled)

Tips & Tricks

  • After filling the pan with batter, gently tap it on the counter a few times to help get rid of any excess air bubbles. It will be impossible to get them out completely but this will help.

  • If you don’t have a Madeleine pan, Amazon has lots of great options as does Williams Sonoma.
