Pumpkin Stuffed Shells

Recipe yields 9 servings

Ingredients

Sauce

  • 1 lb. butternut squash, peeled and diced

  • 1 tsp. olive oil

  • 1/4 c. shallots, minced

  • 2 cloves garlic, minced

  • 2 tbsp. fresh grated parmesan cheese

  • Salt

  • Freshly ground black pepper

Lasagna (or shells)

  • 9 lasagna noodles, cooked (or 1 box of your favorite large shells)

  • 10oz. package frozen chopped spinach, heated and squeezed well

  • 15 oz. fat free ricotta cheese

  • 1/2 c. fresh grated Parmesan cheese

  • 1 large egg

  • Salt

  • Freshly ground black pepper

  • 9 tbsp. skim shredded Italian Blend Cheese

  • 1 tbsp. parsley, minced
