Pumpkin Butter

Cooking the OG pumpkin recipe, Pumpkin Butter.

Every time I think about pumpkin recipes I think about pumpkin butter. I’m not sure why as it’s not used in many but it’s always there, in the back of my head. After sifting through a few recipes, I landed on the Food & Wine Pumpkin Butter which felt like the most reliable. The only issue is, now that it’s made, what do I do with it?

Food & Wine’s Pumpkin Butter

Recipe yields 2 1/2 cups

Ingredients

  • 1 (3lb) sugar pumpkin, stemmed, halved lengthwise, and seeded

  • 1 tsp. vegetable oil

  • 1/4 c. apple cider

  • 1/3 c. light brown sugar

  • 3 tbsp. apple cider vinegar

  • 3/4 tsp. ground cinnamon

  • 1/2 tsp. ground ginger

  • 1/2 tsp. kosher salt

  • 1/4 tsp. grated fresh nutmeg

  • Pinch of ground cloves
