Pumpkin Buttermilk Waffles

Nothing says weekend like a fresh batch of waffles, specifically buttermilk waffles.

I’ve always loved waffles but my obsession with buttermilk waffles (I love the tangy taste the buttermilk adds!) has become so bad recently that I rarely order waffles when dining out because I don’t want to be disappointed. What’s the saying? If it ain’t broke, don’t fix it.

While my go-to weekend recipe is the tried and true Buttermilk Waffles from Martha Stewart (legend, but that’s a topic for another time..), I found it hard to find a pumpkin waffle recipe I was excited about. After doing some digging, I came across the Buttermilk Pumpkin Waffles from The Kitchn.

I found the pumpkin flavor was the perfect amount of subtle while keeping the texture I love in my waffles, obviously the tang from the buttermilk was an added bonus. Don’t forget, if you don’t keep buttermilk in your fridge, you can always make your own!

Pumpkin Buttermilk Waffles from Kitchn

Recipe yields 4 to 7 waffles, depending on the size of your waffle iron

Ingredients

  • 3 large eggs

  • 1 1/4 c. buttermilk

  • 6 tbsp. (3/4 stick) unsalted butter

  • 2 c. all-purpose flour

  • 1 tbsp. pumpin pie spice

  • 1/2 tsp. kosher salt

  • 1/2 tsp. baking soda

  • 3/4 c. pumpkin puree

  • Cooking spray

Tips & Tricks

  • This is my favorite waffle iron. I love that it’s double sided so you can make two at a time. The waffles come out perfect every time.
