Pumpkin Cake Doughnuts
It’s the weekend which means I’m plotting which sweet treats I want to enjoy leisurely with my coffee morning.
I’ve landed on Pumpkin Cake Doughnuts from King Arthur Baking, I know cake donuts are controversial, but to be honest, they’re my favorite. I find them to be less sweet than a traditional donut, and also less heavy. Plus, you can easily whip up a batch of cake donuts at home without having to fry anything, that’s a win win if you ask me.
This recipe perfectly incorporates pumpkin, is quick and easy (which we love), and you can be enjoying them with your coffee in under an hour.
Pumpkin Cake Doughnuts from King Arthur
Recipe yields 12 baked doughnuts
Ingredients
1/2 c. (99g) vegetable oil
3 large eggs
1 to 1 1/2 c. (198g - 298g) sugar
1 1/2 c. (340g) pumpkin puree
1 1/2 tsp. pumpkin pie spice
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1 3/4 c + 2 tbsp (224g) all-purpose flour
3 tbsp. (35g) cinnamon sugar for coating
