Pumpkin Stuffed Shells
Recipe yields 9 servings
Ingredients
Sauce
1 lb. butternut squash, peeled and diced
1 tsp. olive oil
1/4 c. shallots, minced
2 cloves garlic, minced
2 tbsp. fresh grated parmesan cheese
Salt
Freshly ground black pepper
Lasagna (or shells)
9 lasagna noodles, cooked (or 1 box of your favorite large shells)
10oz. package frozen chopped spinach, heated and squeezed well
15 oz. fat free ricotta cheese
1/2 c. fresh grated Parmesan cheese
1 large egg
Salt
Freshly ground black pepper
9 tbsp. skim shredded Italian Blend Cheese
1 tbsp. parsley, minced
